🥕 Carrot Cake – A Sweet Treat to Share!

Moist, spiced, and topped with creamy frosting—carrot cake is a dessert that always brings smiles. Whether you're baking for a special occasion or just because this homemade favorite is sure to be a hit!

Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour

  • 2 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 tsp cinnamon

  • 1/2 tsp nutmeg

Wet Ingredients:

  • 1 cup unsweetened applesauce

  • 3/4 cup vegetable oil

  • 1 1/4 cup brown sugar

  • 3 large eggs

  • 2 tsp vanilla extract

Mix-ins:

  • 2 cups grated carrots

  • 1/2 cup chopped walnuts

  • 1/2 cup raisins

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.

  • Mix Dry Ingredients in one bowl.

  • Whisk Wet Ingredients in another.

  • Combine Wet & Dry until just mixed. Fold in carrots, walnuts, and raisins.

  • Pour batter into the pan and bake for 35-40 minutes.

  • Cool completely before frosting.

Cream Cheese Frosting (Optional)

  • 8 oz cream cheese

  • 1/2 cup unsalted butter

  • 2 cups powdered sugar

  • 1 tsp vanilla extract
