Ingredients
Dry Ingredients:
2 cups all-purpose flour
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
Wet Ingredients:
1 cup unsweetened applesauce
3/4 cup vegetable oil
1 1/4 cup brown sugar
3 large eggs
2 tsp vanilla extract
Mix-ins:
2 cups grated carrots
1/2 cup chopped walnuts
1/2 cup raisins
Instructions
Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
Mix Dry Ingredients in one bowl.
Whisk Wet Ingredients in another.
Combine Wet & Dry until just mixed. Fold in carrots, walnuts, and raisins.
Pour batter into the pan and bake for 35-40 minutes.
Cool completely before frosting.
Cream Cheese Frosting (Optional)
8 oz cream cheese
1/2 cup unsalted butter
2 cups powdered sugar
1 tsp vanilla extract
